Maple Butterscotch Sauce

Ingredients

  • 1/2 cup granulated maple sugar or light brown sugar, packed
  • 1/2 cup pure OurSugarBush maple syrup
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup heavy cream
  • pinch coarse kosher salt

Method
1. Melt the maple sugar, butter, and maple syrup together in a medium saucepan over medium heat.

2. Once the sugar is dissolved and the butter is melted, increase the heat to medium-high and bring the mixture to a boil. Cook for 4 minutes without stirring.

3. Remove the pot from the heat and stir in the cream (be careful; it may sputter a bit.) Stir in the salt. Pour into a storage container and let cool, then refrigerate.

There’s a few things this sauce has going for it: (a) it keeps pretty much forever in the fridge (though we’re finding it doesn’t last long in our house); (b) it’s great, of course, spooned over ice cream (or better still, server over warm apple crisp and vanilla ice cream!) but is also pretty terrific stirred into coffee, hot chocolate, or even in small quantities into plain yogurt; and (c) it’s a breeze to make. And best of all, this recipe is easy-peasy and really, really delicious — I love the way the maple gives the sweet butterscotch a bit more depth of flavor.

 



Maple French Vanilla Coffee Creamer

Ingredients

  • 1 can evaporate milk
  • 1 can of milk
  • ½ cup of pure OurSugarBush maple syrup
  • 1 tsp vanilla
  • Half and half cream

Method

1. Pour the can of evaporated milk into a 1 litre glass bottle.

2. Fill the empty can with milk and pour it into the glass bottle.

3. Add ½ cup of OurSugarBush pure maple syrup and 2 tsp vanilla. Mix well.

4. Fill up the 1 litre bottle with half and half cream.

This is a delicious, delightful coffee creamer for about half the cost. Adjust the sweetness and creaminess as desired.

 


Maple Salad Dressing

Ingredients

  • 1/3 cup olive oil
  • 1/3 cup pure OurSugarBush maple syrup
  • 1/4 cup apple cider vinegar
  • 1 tsp Dijon mustard (optional)

Method

1. Mix all ingredients in a jar and shake well.  Increase or decrease portions to suit your taste.

 


Maple French Toast Casserole

Ingredients

  • Stale bread cubed – enough to fill a 9”x9” pan
  • 8 eggs
  • ½ cup OurSugarBush pure maple syrup or maple sugar
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 1 cup cream
  • maple crumbles or sugar cinnamon (1/4 cup sugar and 2 tsp cinnamon)

Glaze:

  • ¼ cup powdered sugar
  • 1 tbsp milk

Method

  1. Preheat oven to 350°
  2. Grease pan and fill with cubed bread.
  3. Mix eggs, cream, maple syrup or maple sugar, cinnamon and vanilla. Pour over cubed bread.  Cover and let sit overnight in the frig.
  4. Sprinkle with maple crumbles or a mixture of cinnamon sugar.
  5. Bake @ 350°F for 40 minutes covered with foil.
  6. Remove cover and bake for 15-20 minutes more.
  7. Cool and drizzle with glaze.
